Easy & Addicting Roasted Cauliflower

easy and addicting roasted cauliflower recipe

Do you ever crave vegetables? You know, you can taste them all day long and you’re just dying to eat a huge plate of kale? Or broccoli? Or cauliflower? I’ll admit I do NOT crave vegetables all day long, but I do crave this easy & addicting roasted cauliflower VERY often! I’m writing this post around dinner time and it’s driving me crazy that I don’t have a pile of roasted cauliflower in front of me waiting to be devoured! Try some and you’ll see what I mean, trust me. My friend Lori served this up one day I was visiting her, and I was blown away. I thought it would taste good, but I wasn’t expecting how much I’d love it. When Lori gave me the recipe, I was surprised by how simple it was.

Ingredients
  1. 1 head cauliflower, chopped or "sliced"
  2. Coconut oil
  3. Salt
  4. Pepper
  5. Cayenne powder
Instructions
  1. Preheat oven to 400 degrees. Chop or "slice" cauliflower head after removing stem and leaves. Lay flat on a baking sheet atop parchment paper or a Silpat. Bake for 40 minutes, flipping once. Try not to eat it all in one sitting!
Notes
  1. Tiny pieces of cauliflower that end up on the baking sheet may burn and cause smoke to come out of the oven. I always turn the fan over my oven on when I'm roasting veggies to minimize the smoky smell. To reheat, lay flat on a baking sheet and broil for a few minutes to re-create that crispy texture.
