Easy Oatmeal Bars
I had to share this healthy bar recipe because I’ve made it 5-6 times in the past 2 weeks! When me and Judith are on a “kick” for a certain recipe, that food better watch out! It will not last long around here. These oat bars are really dense, and barely sweet. You can add chocolate chips, dried fruit, or nuts. Or all three! The best part is they are so quick to make. I turn on the oven and have the whole batch ready to bake by the time it’s preheated. Enjoy!
- 2 c. dry oats
- 1/4 c. flour
- 1/4 c. ground flaxseed
- 1/3 c. coconut sugar
- 2 eggs
- 1/4 c. coconut oil
- 1/2 t. vanilla extract
- 1/2-1 c. mix-ins (chocolate chips, dried fruit, etc.)
- Preheat oven to 350 degrees.
- Mix dry ingredients in a medium bowl, then add wet ingredients and mix well. Add mix-ins last. Bake for 20-25 minutes.
- Tip: bake a batch or two at the beginning of the week, cut into single servings after bars have cooled, and wrap individually to take on the go as snacks all week long!
