Do you ever crave vegetables? You know, you can taste them all day long and you’re just dying to eat a huge plate of kale? Or broccoli? Or cauliflower? I’ll admit I do NOT crave vegetables all day long, but I do crave this easy & addicting roasted cauliflower VERY often! I’m writing this post around dinner time and it’s driving me crazy that I don’t have a pile of roasted cauliflower in front of me waiting to be devoured! Try some and you’ll see what I mean, trust me. My friend Lori served this up one day I was visiting her, and I was blown away. I thought it would taste good, but I wasn’t expecting how much I’d love it. When Lori gave me the recipe, I was surprised by how simple it was.
- 1 head cauliflower, chopped or "sliced"
- Coconut oil
- Cayenne powder
- Preheat oven to 400 degrees. Chop or "slice" cauliflower head after removing stem and leaves. Lay flat on a baking sheet atop parchment paper or a Silpat. Bake for 40 minutes, flipping once. Try not to eat it all in one sitting!
- Tiny pieces of cauliflower that end up on the baking sheet may burn and cause smoke to come out of the oven. I always turn the fan over my oven on when I'm roasting veggies to minimize the smoky smell. To reheat, lay flat on a baking sheet and broil for a few minutes to re-create that crispy texture.
