As a mom of two little girls, I’m all about quick, healthy foods that I can prep ahead of time. My biggest tip is always make more than you need. These are some of my favorite recipes that I’ve been rotating through for years. My food philosophy is to eat real food, mostly plants, and enjoy the 80/20 rule (80% healthy, 20% treats <– although we all know that can creep up to 30-40% easily, I bounce back to about 20% quickly when I realize how much better it makes me feel). Feeling light and energized, and having that healthy glow are what motivate me to eat well. As mentioned on my Fitness page, on most days I only eat between noon and 8pm. Healthy fats are a key component to glowing skin, clear-headedness, healthy hormones, and staying full through the fasting period, so I don’t skimp on them. I’m not strictly gluten free, but by minimizing processed foods that contain gluten (breads, pizza crust, bagels, etc), my digestive system works so much better and I don’t get bloated. I do make these foods at home from time to time and enjoy them in moderation.
