Weekend Recap + What’s in my Purple Box?

Hey everyone! Happy Monday! How was your weekend? Ours was a typical one: fast-paced Saturday running errands (Garrett drives and I crochet like crazy in the car 😉 I’m making lots of progress on Baby #2’s blanket!), and a lazier Sunday running through the sprinklers in the backyard and staying close to home.

We had dinner with friends Saturday (it was soo nice not to cook!) and I made a yummy egg scramble for Sunday’s breakfast.

I have been on a HUGE cleaning kick lately, and I cleaned all the shelves in the fridge this weekend. Doesn’t the whole kitchen feel cleaner after the fridge shelves are scrubbed and shiny?! Remind me to clean my fridge more often…it’s totally worth it! Haha! (PS: It’s too early for nesting, I’m only 25 weeks along! I don’t know where this cleaning spree came from.) Would anyone want to read a “What’s in My Fridge?” post in the future?? I’ve been thinking about doing one.

I put tacos on the meal plan for Sunday night, and I discovered I LOVE refried beans in my tacos! Why didn’t I try this before?! Aldi’s organic refried beans have a very short, real food ingredients list and great flavor.

    Since alot of our meal planning can begin with what we have on hand in the fridge, I think an article of “what’s in your fridge” would be great!
